If syrup and vinegar had a lovechild it would be a shrub. It's one of those things that reads like it will be vile but really it's not. It's strange, but good. Really it's a cooling (physically and energetically) and refreshing summer drink...and yes, I know vinegar is not the first liquid that springs to mind on a hot day.
I put equal parts of manky supermarket strawberries (at that point when they were simultaneously wizened and soft), cider vinegar and granulated sugar in a jar and shook it about a bit and left it for a day. I imagine white wine vinegar would work but absolutely don't use malt vinegar because then it would be vile. I also wouldn't use balsamic vinegar as it's just too, too strong and would overwhelm the taste of the berries...
oh, I should also point out that I diluted it before drinking but the 'concentrate' itself was lovely and would be great in a salad dressing.
...aaaaaand, you should strain it after leaving it for a day otherwise you'll probably get extra fermentation. Plus, you don't really want floaty bits.
